"Mallika" is a mango type native to India (ours are grown in Homestead Florida). It has become a favorite due to its superb flavor and a hardiness. There is a catch, however. The fruit must be picked mature green for optimum flavor, and ripened off the tree. In India, they are traditionally ripened in camel dung while on the way to market. We promise we don't use camel dung — or dung of any sort! Mallikas can just as easily be ripened in cardboard, at room temperature.
