Bell Pepper and Yam Stir Fry

* Red/Orange/Yellow Bell Peppers (julienned)
* Yams or Sweet Potatoes (sliced)
* Onion (any kind)
* Garlic
* Fresh Herbs (dill, parsley, cilantro, basil, etc)
* Olive Oil
* Sliced Hakurei Turnips (optional)
* Salt/Pepper to taste
Cook the yams and/or sweet potatoes in a covered skillet (cast iron works great), in a generous amount of extra virgin olive oil. When about 3/4 done, add garlic, onions, peppers, whatever fresh herbs are on hand, and turnips (the turnips will give the dish a lot more sauce). Season, mix well, and recover until done (finish on low/medium heat). This dish is very filling and comforting. Hint: don't skimp on the olive oil!
